You won’t get the chance to buy different varieties in the supermarket but a local grower or fresh produce market should be able to help you choose different varieties to try for different recipes. Now, we can't forget about delicious sweet potatoes! These are more popular and more widely available than they used to be. They come in different varieties but generally the orange varieties are better for home cooking purposes. They are much easier to grow in warm areas than ordinary potatoes. How to do you buy and store potatoes?Buy potatoes that are firm and dry with no signs of sprouting or broken skin. Store them in a cool, dark and dry place, in paper not plastic bags. Unwashed potatoes last longer because the soil protects the potatoes from damage and greening.  Potatoes that have been exposed to the light will have green patches. These should be discarded as the green areas may contain the toxin solanine. Potatoes recipes can be used as a main dish or a side dish and there are many to try.
