Apple Pie Recipes
There are millions of apple pie recipes, as many recipes as people that bake them but having a simple apple pie recipe available to you that you are confident with means you will never be short of a quick dessert for any occasion. Any shop bought pie cannot beat a homemade apple pie made from fresh apples. At harvest time make dozens of these over a few days and freeze them. If you make them on tinfoil pie-tins you can freeze them in a pie tin ready for the oven when you want a quick dessert. That means that later in the year you can just pull them out of the freezer and use them when you need them. This apple pie recipe is a traditional one.
#1 Tradtional Apple Pie Recipe
Ingredients: For the crust1 ½ cups of flour1 ½ teaspoons baking powder½ teaspoon salt1/3 cup of shorteningCold waterA little milk For the filling 4 medium sized apples4 tablespoons sugar1 tablespoon butterDirections: - Sift together the flour salt and baking powder. Rub in the fat. (Try to make sure your hands are cold for this.)
- Add the cold water a teaspoonful at a time until the dough just holds together. Knead it gently. Wrap the dough in cling film and rest it in the fridge for an hour if you have time.
- Peel, core and chop the apples. Chop the apples into bite size pieces or thin slices.
- Roll out two thirds of the pastry and line the bottom of a lightly greased pie tin.
- Add the apples to the base and then sprinkle over the sugar. Dot the apples with small pieces of butter.
- Roll out the remainder of the pastry and cover the pie. Press the edges firmly together and trim. Make two small slits in the top to allow steam to escape. If you want to freeze the pies make some leaf shapes, or ‘A’s, out of spare pastry and stick them to the lid with some milk. This will help you identify them in the freezer.
- Brush the top of the pie with a little milk and bake in the oven at about 350 F for about thirty minutes, until the crust turns golden brown.
Extra Tip: This apple pie recipe can be served hot or cold, with cream, ice cream or custard. If you are going to freeze the apple pies then let them rest until they are cold and then place each pie in a plastic bag, suck out the air and seal tightly. Label the bags, or rely on your coding with the pastry.
#2 Crusty Apple Pie Recipe
Apple pie recipes are different in every household; the unique difference with this one is that the pastry is made with oil, which gives it a different taste and texture from the usual shortcrust pastry. The filling in this pie is spiced with nutmeg, cinnamon and allspice, which all go well with apples. You can use all of them or just some of them. I recommend trying cinnamon at least because the aroma and taste of an apple pie with cinnamon is delicious. Ingredients: For the crust2 cups flour½ cup vegetable oil (flavorless) ¼ cup milk¼ teaspoon salt For the filling: 6 large apples½ cup light brown sugar½ cup granulated sugar2 teaspoonfuls cinnamon1 teaspoonful nutmeg1 teaspoonful allspiceDirections: - Mix the flour, salt, oil and most of the milk together. If the mixture is dry add the rest of the milk.
- Split the dough into two parts, about one-third to two thirds in each part.
- Roll the larger piece out on floured board. You may find it easier to roll the dough between sheets of waxed paper, as it can be flaky.
- Line an eight-inch pie tin.
- Peel core and slice the apples and mix with the sugar and spices and place in the piecrust. A little butter can be dotted over the apples if desired, or add a little lemon peel.
- Roll out the rest of the pastry for the top crust and place over the pie, sealing the edges well. Trim the edges and put two small holes in the top of the pie to allow steam to escape.
- Place the pie on a baking sheet to catch drips and cook in the oven at 425F for ten minutes. Reduce the heat to 325F and cook for another fifty minutes. If the crusts start to burn cover the edges of the pie with foil.
Extra Tip: This pie can be served hot or cold and ice cream is perfect with it. It is a perfect Christmas apple pie recipe because the spices have the smells we associate with Christmas. You might like to try cloves or ginger instead of the spices mentioned in the recipe but remember to warn your family about the cloves before they eat. Cloves are not poisonous but they have a strong taste if popped into the mouth whole.
