Mock Tart Apple Cake Recipe

An apple cake recipe may sound unusual, but this cake, made by the rubbing in method, makes a handy addition to your recipe file.

In some ways it resembles an apple tart but the apples don’t sit on a pie crust, they are embedded in the surface of the dish.

By using different varieties of fresh apples and a variety spices you can make this dish different every time.

It cooks quickly in the oven and can be cooking while the main course is being eaten allowing it to be consumed hot and fresh as soon as you are ready for it.

Ingredients:

  • 1 ½ cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup of milk
  • 2 tablespoons shortening
  • Four or five apples
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • Directions:

    1. Sift together the flour salt and baking powder. Rub in the fat to make fine breadcrumbs. Add enough milk to form a soft dough.
    2. Roll the dough out on a floured board to ½ an inch thick and place in a greased pan.
    3. Wash and peel the apples and slice them.
    4. Press the apple sections into the dough and then sprinkle the sugar and cinnamon over the top.
    5. Bake at 350F until the apples are cooked and the dough is just turning brown.

    This apple cake is best when cooked and then served straight from the oven with cream or ice cream!
